Not many options at all without gluten or traces but the allergen menu is marked and very clear. You can ask for the tomato salad gluten free.

The stuff is really helpful and they help me choose the plate for me. They have list of allergens (you scan red QR code on the bottom of the menu). I ate tortilia de patatas and it was delicious :)

Very friendly staff. Understood celiac and had a dedicated fryer (I'm pretty sure - we aren't celiac so isn't imperative). The menu has a variety of tapas and there is a red QR code at the bottom to see what allergens are in each item. They offered a GF cracker in place of bread for one thing we ordered. Not a *ton* of things on the menu for GF and dairy free, but there were a few, and our server was accommodating and friendly.
