They do not have dedicated fryers and they do not have a separate prep area. After speaking with an alleged manager and telling them I am celiacs, my plate still came out with my refried beans in a corn shell that was deep fried in the fryer after she specifically told me everything goes in one fryer. Even their chips go in the fryer

Chips are not gluten free, made in shared fryer. Waiter brought over some corn tortillas instead of chips. Fajitas and rice are gf. Have many items listed as gf on menu but I would confirm that they are celiac safe.
The staff is very friendly and knowledgeable. There are a lot of gluten free options; plethora of appetizers and entrees. You can substitute flour tortillas for corn. I have been multiple times and have never gotten sick. I really recommend this place, one of my favorites
