This food truck offers sushi made from the fish parts not used by the owner’s private omakase service. So the menu will vary. They offer “open” hand rolls, so they’re like sushi tacos made with nori instead of tortillas. They also have street corn made by cutting the corn cobs in quarters.
When I was there, nothing on the menu used soy sauce or any other gluten.
It’s not cheap, but the fish is really high quality and fresh.
They don’t serve drinks, but the torch is parked outside Texas Sake, which does.
