I don't know about their kitchen operation, but their staff is friendly and helpful. They have many GF options available, but they aren't designated or marked; you have to ask. I enjoy the yellow curry with chicken and brown rice. I get the lunch combo and for and additional $3, they'll substitute the veggie roll (which is fried in non-designated fryer) for 2 fresh (Spring) rolls with peanut sauce. The sub price is a bit steep, but it's a nice, fresh addition. Plus their peanut sauce is out-of-this-world!UPDATE: every recipe for peanut sauce I’ve seen contains Soy Sauce. If you’re extremely sensitive, skip it.
The Yellow Curry is very delicious also. Potatoes, green, red peppers, and onion with the meat and heat level of your choice. My friend had the Satay Chicken which came with 4 skewers, peanut sauce, and a side of chopped cucumbers in a sweet sauce. It was also delicious and GF. I will try that when I'm seeking a lighter option.
I have never had symptoms after eating at Thai Hut and they are very good at accommodating. If you're extremely sensitive, use caution, as always.
