Staff explained that they do their best to avoid cross-contamination but caution that wheat flour still circulates the kitchen. The thin crust pizza was interesting but not amazing. The place had cool vibes nonetheless - fun spot to have a bite and chill with friends!

We were in this past weekend and had 2 gluten free pizzas. They were EASILY the best we've had. Another reviewer mentioned the crust tasted like corn. It is corn. They use corn flour for their crust. Unique and really tasty!

Pizza’s OK. The crust tastes strongly of corn if you like that. Toppings were a little meager. I appreciated how most drinks could be made virgin, I got a gorgeous one!

I thought I’d shared the details of our excellent dining experience at The Civil in Kitchener last evening. Handmade gluten free pizzas, salads and cocktails. I had the margarita flight and it was so tasty. I spoke with the chef who also has celiac. He created the recipe for the gluten free crust while making arepas, and thought it could work as a pizza crust. He was right! The crust is made with three ingredients: masa corn flour, egg and water. It has a slight corn flavour, but overall it was very tasty with crispy edges and bottom. We shared a spinach Caesar salad, and I had the pizza called “Panchetta Brie-lieve It”. I was very pleased. Zero reaction, and I am very sensitive. My husband can eat gluten and loved his whiskey sour flight and gluten pizza called “Full Denim Tuxedo”. Can’t wait to go back 🙂
