The French Twist Food Truck

I am biased, because my husband runs the truck, but he turned the truck entirely gluten free so that me and our son had someplace yummy to eat. I especially love the gluten-free bechamel sauce on the Croque Madame! Hope you give us a try!

The French Twist Foud Truck has been written up nationally for its high-quality comfort food. The chef is a graduate of the Culinary Institute of America and his wife and son have the celiac gene and eat gluten free. The truck features a menu that is already gluten free or can be gluten free, including a Croque Madame or Salmon Madame made with gluten-free bread and gluten-free bechamal sauce. If you are looking for something with crunch and flavor, the gluten-free Frog Proivencal is breaded and deep fried and accompanied by a housemade Provencal sauce. Vegetarian options are available and be sure to check out the gaufrette potato chips, made in small batches, and the creme brulee. Everything is made from scratch and the fryer is not mixed, though the flattop is. The truck is available for catering and posts often on Saturdays and every other Sunday at Odd 13, a gluten-free brewery in Lafayette, Colorado. Open for lunch and dinner those days.
