While this isn't a certified gluten-free environment, Matt, the owner, was extremely knowledgeable and helpful in helping my wife to identify items on the menu that are gluten-free. He also offers gluten-free bread for the sandwiches on the menu, which is not available company-wide. He further explained that for preparing items for people with gluten sensitivity that precautions such as wiping down food preparation areas and changing gloves are used to limit contamination with gluten items. Besides the gluten-free bread, most of the sandwich ingredients are gluten-free. The company website also has a menu that identifies allergens.
