The server didn't know what gluten was, but I explained it to him. With that information, he was readily able to recite the ingredients of every menu item and tell me which ones to avoid. There were a couple items that weren't made in the restaurant, but he went to the kitchen and checked the ingredients for me. His advice was perfect, as I had a wonderful meal without any side effects.
