Fantastic, fabulous restaurant! He has a de facto gluten free fryer for the fries because he puts only the chicken - which isn't breaded - in one fryer with fries, and then has another one for the fried fish. None of his sauces have gluten, at least to his knowledge; he didn't seem totally aware of the concept that you have to check every type of sauce to see if any of the ingredients, like soy sauce or something, have wheat in them, but he doesn't use flour at all.
Just be cautious if you order the 301 special: it's a bunch of meats layered on a platter and he puts a piece or two of white bread at the bottom, so if you order it, just make sure to tell him not to do that.
The food is seriously fantastic, the best bbq I've had here by far. And I feel reasonably confident about it being mostly safe to eat there, but that has more to do with him using very few gluten-containing ingredients so the risk of cross contamination is low.

I asked about any Gluten Freenoption ot on their spices and was told there is no flour in anything. After smoking some meats are fried. But nothing floured is in the place!!!! Really Great find.
