Waffle House is VERY limited on gluten free options and would not work at all for those with Celiac or allergies. The oil that they use for everything has gluten in it. I'm only mildly intolerant to gluten and can tolerate very small amounts.
That said, our waitress and the cook went out of their way to help me find the best option. The cook was very knowledgeable and offered to make me an old fashioned omelet (not a fluffy omlet) that only needed a tiny bit of oil. It was yummy and I was very appreciative of their kindness and suggestions!

I cant speak for anyone who works there, but the staff when I went was incredible and cleaned the cook surface, etc before cooking our food. They were super sweet and didn’t make it seem like an inconvenience. I got the breakfast combo with scrambled eggs, sausage and hashbrowns and had then hold the toast.

We were on a very long drive back from the eclipse and my bf loves Waffle House. I was not expecting to order anything, but our server, Tonya, was very knowledgeable about allergies as she has one herself. She was able to explain how everything was cooked in the back and gave recommendations on what I could eat. The chicken is cooked in a separate area from floured surfaces, and the hash browns are also separate from the pancake area, but they are on a shared burner. She explained that they always keep the hash browns on one side though. I got a chicken hash-brown bowl and it was pretty tasty.

There’s mostly gluten free options available, I had to google and see beforehand; the workers didn’t seem to understand but were accommodating and cooked my food on a separate grill with clean utensils, after I had to explain, then she understood and was very apologetic and remade my food. Honestly 50-50 on if you’ll get glutened depending on who is working and willing to clean and separate your food. I enjoyed my food, and the cook specifically was great.

Food is decent and they did well at keeping things separate. I did not get sick and I'm very sensitive. They don't have specific gluten free items though so I would still with the hashbrown bowls.
