I have not been to this restaurant yet, but they confirmed that their sushi vinegar is GF, and that there are many sushi and sashimi GF options, as long as I avoid any spicy rolls. The mayo used in the spicy rolls contains regular soy sauce, so you have to stay away from those. Otherwise, just let them know and they will show you what works.
