This is one of my go to places for some of the best Italian food. Lots to choose from. The artichoke appetizer can be made GF and I order some GF pasta with it to make it a meal. That is typically my go to order bc it is sooo good. They also have an amazing eggplant parm that is GF. They can make any pasta GF and they are amazing as well. I haven’t ordered anything bad here yet. So delicious and so many dishes to choose from. Our regular waitress has a daughter who is celiac so very knowledgeable. This place is just fantastic and I can’t recommend it enough.

Never would have thought this would become one of my only safe restaurants with the name. Having celiac can be very socially isolating when you have a family that loves to celebrate with food! But you must be clear you have an allergy not a preference, and ask them to change the pasta water. The first 3 times I spoke with chef, now I know them all well enough I don't feel the need.
Yes
The manager at Wheat and Water is great and fully knowledgeable. They have a lot of choices on the menu but ask to speak with the manager before you place your order. Twice in one meal I got a salad with croutons. My entree was safe and delicious though.
