We were very disappointed to arrive from the other side of the country to learn that they had stopped making sushi. Not sure if the reason was lack of staffing or if they plan to resume making sushi again. It was October 2021, so perhaps due to the pandemic. The only other gluten-free option was shrimp cocktail; no meals. We had to hunt for anything reasonable to eat during our layover.
