I called ahead to confirm before arrival and the server recognized what I was asking but you ABSOLUTELY need to specify your questions; "shared fryers" didn't mean the same as "what is oil fried" to her. Had a similar hiccup while in-person.
Most gravy isn't safe for hyper-celiac, but high tolerance eaters can indulge. Their reductions had some corn starch but didn't cause a reaction.
Wild Game Trio App (Quail Medallions, Venison Roll & Boar Sausage) - couldn't have the Quail (breaded & fried), sausages were okay with my stomach and the venison was iffy. It was still served with the gravy, even avoiding gravy there was a bit of a rumble...light contamination from something in there that the server perhaps doesn't know about (i.e. Soy sauce in the marinade? Maybe a bad bacon brand?)
Venison Chops dinner (wild rice bed, sauce & roast vegetables) - didn't have a gluten reaction, I was a little worried with the rice initially because you can taste the beef broth it was cooked with, but ultimately no issues except a full belly. 10/10 well cooked and will definitely return when given a chance.

Lunch...server walked me through options. I had taco salad without shell. Very tasty! More choices than salad too!
