I called and the fryer is shared and apparently all of the sauces have flour in them for thickening. I was told I could get something dry, but there’s a good chance most things have touched gluten.

Not a ton of options, since the grill and oil aren't safe, but they are kind, knowledgeable, and willing to work with us. Chips are a no-go, and anything fried will be a hard no. The manager told me they could put anything on the grill protected with foil if I wanted. The rice, beans, and ingredients (meat, cheese, veggies) are able to be safe. The enchilada sauce has flour in it but they have a cheese sauce that's safe and it was delicious. I got the combo with rice, beans, enchilada, and taco. Another Celiac was there at another table at the same time and she got tortilla soup without the chip topping.
All in all, though it's not the most ideal Celiac place to eat, I was well taken care of and didn't react (I'm sensitive). It's delicious New Mexican food!
