They were very knowledgeable about gluten, and keep it segregated in the kitchen at all times. Separate fryers, separate area of the kitchen, new gloves each time. When they did our order, we could hear the kitchen staff yelling “celiac”. All the desserts have gluten, but they made us the churros with plantains, and they were so good!
