I told the chef about celiac and ordered GF chicken tenders. they showed me the whole process for breading and frying and it was 10/10 experience. As with any place, I would just double check through the process to make sure there's no disconnect between the cashier and cooks. You can never be too cautious when alerting the kitchen I'd recommend not just counting on the cashier to convey the gluten-free message, sometimes make sure to touch base with the cook or chef.
