As noted it is a chain. Most we've been to are great when you tell them your allergies. Immediately removing gloves, washing hands and putting on new gloves. This is our "home" location.
Depending on how busy this one is, the same person who starts will finish the bowl rather than passing to next station person and asking them to change gloves.
Items usually clearly labeled (there was a label change that was hard to read for a while). We sometimes ask them to take a bowl from the middle of the stack as the person who starts each bowl is often packaging pita so could contaminate the bowls.
Lots of options. We do a build your own bowl rather than remove things from from preset recipes.
Always communicate at the start the allergies and ask them to change gloves. Usually at the words "gluten allergy" they are already headed to the sink to wash hands and reglove.
