Enjoyed a Fire & Smoke burger and side salad here for lunch on 7/6/23. I mentioned that I was gluten intolerant (celiac) and asked if the staff had been trained. My server was unsure but she would ask. She returned to tell me the staff had been trained saying further that different utensils, etc. would be used. I also asked her to please note it on our ticket. With family in the area, I will likely eat here again. They did not have a dedicated fryer.

Limited options for GF. No separate menu and items weren’t labeled GF. I planned to get the steak tacos, but when I asked for the corn tortillas the waitress said they no longer carried them. They do have GF hamburger buns.

Great reviews online. Responded quickly about GF Offerings. Seemed well educated.
Waitress offered guidance on Gluten free options.
Gluten free buns for sandwiches, corn tortillas for tacos, and salad options without bread.

If Central Standard had a gluten free menu at one time, they no longer do. We interacted with two team members who were not clued up very well about their gluten free options. They do have gluten free burger buns, but you can't have anything fried due to no separate friers. My wife and I both have celiac disease and we likely won't be going back.

Our waiter, Paul, was fantastic! He shared that his sister can’t eat gluten and has lactose intolerance. He seemed rather knowledgeable about eating gluten free. He asked how sensitive I was and explained they could not guarantee there would not be cross contamination since food is prepared in a shared kitchen. He also explained what on the menu they could do gluten free and that the fries would not be GF because of the cross contamination with the fryer. I had the chicken bacon grilled cheese on a gluten free bun with a side of coleslaw. Everything was really good! I have not had any reactions and plan to eat there again. There were a could different coders on the drink menu, but I did not try them.
