Tell him what kind of meat you want: brisket (juicy or lean), beef rib(s), pork chop, etc. Your meats are freshly cut (the beef rib was HUGE), wrapped in butcher paper, weighed and labeled, and put on a cafeteria tray. Slide down to the cold items and take what you want (pre-dished in pint or quart sizes - potato salad was good, coleslaw was excellent). Then slide down to the hot items they serve to you. The green beans with bacon were tasty. Then you pay at the end of the line. We went upstairs to eat and there were free baked beans, and thick sliced pickles and onions. Free refills on beverages, at least upstairs.
