I walked in and ordered takeout. The cashier said they can do any sandwich gluten free, and that they treat sandwiches for celiacs like an allergy. The kitchen is pretty open to the seating area and you have a clear view of the prep area from where you stand to wait for your order. It was pretty clear who was making my sandwich, because the person was carefully navigating around gluten: changing gloves frequently, placing the bread on its own parchment covered tray for the toaster, opening the fridges under the counter with her foot and pushing them open with her knee so she didn’t have to touch the handle with her hands, and taking sandwich fillings from the fridge, not from the prep station that was being used for other sandwiches. I was so pleased to see all the precautions. So much so that I didn’t even really mind that they made the wrong sandwich! Lol. It was good even though it wasn’t what I ordered. I was in a hurry so I didn’t realize it wasn’t the right one till I was on the road so I didn’t alert them to the mistake.
