Although the food here tastes excellent, I have doubts about the claim of gluten free. They claim GIG training, but no one I saw behind the counter seemed to know what that means. Corn tortillas are made on the same griddle as flour, without cleaning the surface first. Watched the cook go from cooking flour to corn tortillas on the same griddle without wiping down the surface, changing gloves, or cooking utensils. She then used a spatula that was kept in a pile of wheat flour and coated with the stuff to turn the corn tortillas. When I got my "gluten free" meal, that I had specifically asked for off the "gluten free" menu, it had a wheat flour tortilla on the bottom of it. I understand the limits of the "gluten free" claim in any restaurant. There is a high risk of cross-contamination anywhere you go. But to say you're GIG trained, and then have this degree of ignorance, is a stretch of the imagination.
