Their GF menu is really quite amusing. Pages and pages of disclaimers, repeated multiple times on each page. (No separate fryer is the big one.) After reading through the disclaimers I had a chicken burrito “unwrapped” - in a bowl. I needed something filling and safe and this did the trick. The taste was fine, should have said yes when offered hot sauce. Not exciting food but safe.

Staff are knowledgeable (and when they are unsure, they are quick to verify with a manager), accommodating, and treat the situation seriously. All orders with food allergies are run through a manager. I think cross-contact is still a likely risk here, but care is taken to communicate the risk clearly and avoid as much as possible.
Restaurant has a "gluten sensitive" menu that highlights items on the regular menu that are naturally GF or that can be modified (for instance, swapping a corn tortilla base for the wheat in huevos rancheros). Items that are fried in the non-dedicated fryer are listed but include a cross-contact warning. Restaurant has GF bread available, though cross-contact is a risk they state up front.
Overall I think this is a great option if the stated risk level is acceptable for your health. I eat here pretty often and have never been sick.

Ask for the gluten free menu. There is info about cross contamination!! Great for celiacs. No dedicated fryer or toaster as an FYI. I had a great experience.

You can get your GF bread "toasted" in the broiler since the regular toaster is used for regular bread
They have a separate GF menu with clarifications about cross contamination. I got the huevos rancheros modified and they were great!
