Staff are knowledgeable (and when they are unsure, they are quick to verify with a manager), accommodating, and treat the situation seriously. All orders with food allergies are run through a manager. I think cross-contact is still a likely risk here, but care is taken to communicate the risk clearly and avoid as much as possible.
Restaurant has a "gluten sensitive" menu that highlights items on the regular menu that are naturally GF or that can be modified (for instance, swapping a corn tortilla base for the wheat in huevos rancheros). Items that are fried in the non-dedicated fryer are listed but include a cross-contact warning. Restaurant has GF bread available, though cross-contact is a risk they state up front.
Overall I think this is a great option if the stated risk level is acceptable for your health. I eat here pretty often and have never been sick.
