Just tell them you are celiac and they take every precaution needed. My only suggestion, ask for new condiments for anything that is used with a spreader (mayo) to avoid the cross contact with buns.

Everything in house is GF! They change gloves, wipe surfaces and are very aware! The only things that contains gluten are the buns, which is awesome because it's the only thing that should have gluten in it anyway!

I told them I had a gluten allergy and the person at the register announced it to the entire staff. Line cook responded by yelling down the entire line "gluten allergy! Change your gloves and no touching the buns!" It was hilarious and I appreciated it very much.

I appreciate that they always ask if my lettuce wrapped order is an allergy. Fries are the only thing in the fryer, so no worries about cross contamination.

I’ve gone three times in two months and it’s been great every time. I tell them “allergy warning, I have celiac’s”. I order mine on lettuce (they do a really great job at wrapping the burger in lettuce), with everything on it.
I then inform them that my spouse would like a normal bacon burger on a bun. The staff has always reassured me and I hear them tell each other “allergy!” while cooking. They’ve always put my burger in a different bag marked “***ALLERGY***” and there was a red sticker on the tin foil of my burger.
If you’ve never been to a Five Guys, they have a very limited menu of just burgers (bacon, cheese, or plain) in three sizes, French fries (plain or Cajun), and milkshakes.
The only gluten items on the menu are the buns and malt. The chocolate shakes do not automatically come malted, so there’s never been a worry for me there.
