It is set up a lot like a subway. The gluten items have their own utensils and are not easy to contaminate. You watch them make it, so you know how clean they are being. They are extremely careful not to cross contaminate. They clean the line after each prep. Sauces are in squeeze bottles. Gluten free ones are in a separate tray. Everything is clearly marked. They ask right away if you have a gluten intolerance. The fried bird are at the end of the line to be added last. I am extremely sensitive and rarely eat out. It was all fresh and very tasty. The whole place is kept very clean.
