Dedicated gluten-free menu with options for miso-based ramen but no meat options as toppings (they substitute tofu instead).
Sat next to the kitchen and watched them make the gluten-free ramen and they kept the rice noodles separate/elevated while cooking the other noodles as well. Feel good about their precautions when it comes to gluten-free preparation.
