William (Goro) is very knowledgeable and happy to make something you can eat and avoid getting sick. The main downside is last time I was there, he let me know that there is malt in the vinegar they use for the sushi rice so nigiri was off table. He put together a nice sashimi spread for me though, and I really appreciated his knowledge and helpfulness.

Staff were knowledgeable about gluten free and aware of cross contamination. I was only able to order the hibachi but had 4 choices of meat, had gluten free soy sauce and came with fried rice and sautéed veggies. It was delicious. Also came with miso soup and a ginger salad (both had dairy). I am very sensitive to cross contamination and did not get sick! I would definitely go back.

They do have gluten free soy sauce. Asked the waitress to check ingredients on the miso soup and she was very helpful. No issues.

They do have gluten free soy sauce. Goro, the owner/sushi chef, is happy to make gluten free modifications. He is a sweetheart and will follow whatever guidelines you give him, but not knowledgeable re: cross-contamination unless you bring it up.
