According to the Kitchen Manager, gluten free is difficult to purchase, and it often is more expensive. thus a gf pizza or flat bread dish costs more, and people need to expect that.
Since only 1.4% of the population have celiac disease,
there is not the demand, and wholesale food suppliers
charge more, much more, and the customer at a restaurant need to expect that.
My recent experience was fine... because I know prices are higher.; My flat bread pizza was great.
