The fish here is amazing quality. Absolutely delicious. Solid cross contamination protocols, where the sushi chef changed gloves, wiped down the prep area, knives, and plastic wrapped bamboo mats with a clean cloth. They have gluten free soy sauce as well. From the vantage point at the sushi bar, I would imagine that the rice can get cross contaminated from all chefs grabbing rice with their gloved hands. However I have never gotten sick and the fish is good enough quality to be totally content with only sashimi.
