Their sushi rice doesn't have gluten and they're happy to change knives and gloves if you ask them. They also have gluten free soy sauce (you have to ask for it). But, they're not 100% certain if some of their ingredients contain gluten - including spicy sauce and anything with eel in it. They're also unsure if anything fried or with tempura has gluten in the batter. I felt fine after my sushi which was pretty simple, you might be taking a risk if you get anything else though.
