The "gluten free" menu appears to be more of a suggestion. I ate here two mornings in a row, once getting an omelet from the regular menu and I didn't get sick. The gluten free pancakes are very good. It's true that they only have the one griddle, but our waitress assured me that they clean it very well before they make a gluten free pancake. On the second morning, the waitress explained to me how all the different breakfast meats are cooked and we decided the bacon was the safest option (in it's own oven).
