I have eaten the following dishes without problems: enchiladas (cheese or chicken), and Ironwood spuds. The one cook has indicated to me that their omelettes can be prepared GF, but I haven’t tried them yet.
Tips for getting a gluten-free meal here (for a high sensitive gluten intolerance person):
1) Ask for the gluten-free green chile, not the regular green chile (which has flour in it)
2) Ask them to not warm the corn tortillas in the common fryer
3) Avoid items prepared in the common fryer (e.g., french fries).
The food is tasty and reasonably priced. I eat here when I’m running errands in West ABQ/Rio Rancho.
