I had sushi (hence the name). Long story short, all the rolls are prepared on the same surface. They use the same knife to cut all the rolls. They are aware of how to prepare things gluten free and can make any roll you want GF, however, one of my rolls did come out with crunch (not GF) and I didn't notice until I was on my second bite :-(. It's a fun experience and great tasting sushi, but not quite celiac safe.

The staff is very knowledgeable about gluten free and will prepare a made to order sushi roll that is gluten free. They have plenty of options for sushi rolls as well as GF soy sauce.
