We don't make it to downtown Albuquerque often anymore, now that we live in Santa Fe, but went out of our way to swing by again after several good experiences. We were informed when trying to order (03/2024) that they do nothing to protect against cross-contamination. When we expressed surprise, having previously been there, the young lady advised, "Well, we never have, so he must not be sensitive." No separate prep board, cooking screens, or even pizza cutter. Not sure if there is new ownership? New management?

Gluten free crusts are a texture I've never gotten anywhere else... doughy and delicious the way i remember "regular" pizza being... so unless it was a regular crust by mistake, which they swore it wasn't 😅, it was AMAZING!

I’m from New England, so I thought it would be a nice place to go - the reviews lead me to believe it was gluten free. Their entire dining room is closed and has been since March 2020 (fenced in outdoor seating.) Ordering at the window the waitress made it clear they weren’t dedicated, which is usually fine for me. I asked for any extra precautions they could take. Our salad came out with croutons, we decided to just excavate them and surrounding greens because they were only on top. Pizza was decent, yummy sauce and cheese. All was fine until later that night I got very sick, and still am almost 24hrs later. This place is NOT celiac friendly, I advise against risking it.

Pizza crust by the gluten free bistro
Great gluten free pizza! Some of the best I’ve had. I’m not celiac so I’m unsure if it’s safe.
Yes
Gluten free pizza was delicious. My family also ordered the sicilian pizza and some calzones. There was not a bite left so I'm going to give it all a thumbs up.
Awesome GF pizza. They just got a new crust and it’s crunching and amazing. Very satisfied
Pizza became soggy very quickly.
The only gluten free option they had was Pizza but it was good. The waitress was not well educated and had a hard time answering any questions, eventually admitted she did not know what gluten was. The manager was great and walked us they how they prevent cross contamination. It would help to educate all your employees on Celiac and other food allergies.
