They were so super careful to not cross contaminate! They ask if you have an allergy and if you do, they change gloves and prepare your food separately. They’re very careful. I’m a very sensitive celiac and have been here mode than 10 times and never a reaction. And everyone I’ve encountered has been just as careful.

As a celiac, I was impressed. The Udi’s rolls are EXCELLENT and the same size as a glutinous roll. It was a modest 1.50 upcharge. I can eat everything on the menu except meatball sub and chicken parm sub. I ordered a chicken parm sub for my wife and a GF sub for me and 2 people immediately told me they can’t do the chicken parm GF. Good training. They also had 1 person make my sub on a different surface (he changed his gloves without asking) so my sub didn’t go down the same line and thus didn’t use the spatulas that were used to make other subs (a risk you’d have at Chipotle or Subway or Quiznos). It was delicious too. It’s now my favorite place to go get lunch, after 1 visit.

Service took a while. I ordered ahead of time even. I waited around 15 minutes once I arrived and was told it would take longer because of my allergy. Overall bread was hard and fell apart while eating it.

I stopped by on a Sunday afternoon to get a gf sub. They asked allergy or preference, wiped down the counter, put down paper, used a clean knife, changed gloves, and were cool about grabbing toppings from the back. They even moved the sandwich to fresh paper at the end of the line instead of wrapping in the paper that had sat on crumbs. Altogether I was impressed! At most locations I have to correct things as I go down the line, but the two staff who interacted with me here seemed very well trained on gf protocols.

They ask if you have an allergy or preference when it comes to the gluten free bread. After stating I have an allergy they cleaned the slicer, the counter, and all of the staff switched gloves. A new employee had accidentally used the mayo knife so they gave me new bread and then they use the squeeze bottle of mayo to prevent cross contamination. Everyone was very friendly, understanding, and aware of how to handle my allergy.
