I decided to give this place a try after reading positive reviews. The gluten free bread is individually wrapped and kept separate from the regular bread. I mentioned it was an allergy and that was relayed to the cook. He finished the previous order, poured water over the flat top and scraped it down. Changed gloves and prepped the bread on a separate paper. I also saw a second slicer in the back, so that may be where gluten free cold cuts are sliced. It was just past normal lunch time, so not very busy. That may affect your personal experience. I’d probably get a cold sub if it was crowded so they wouldn’t have to clear the grill just for me. The Philly was pretty good and hit the spot. Bread was soft and stayed together. Not sure of the brand. They have some Udis dessert on the counter, maybe cookies or brownies? All in all, felt safe and happy I could pop in for a quick sandwich.
