RUN don’t walk to Juche! Located in the former restaurant COOK St Paul. Same owner, new concept. The owner, Eddie Wu, has non celiac gluten sensitivity and is so understanding of gluten! Fryer is all GF, anything made with gluten is made off sight and “you don’t have to worry about any flour moving around!” He was so knowledgeable and he said “I know gluten is tough, and empathy goes a long way” It was so incredible! I got the beef bulgogi bibimbap, sweet ginger wings, and honeydew ice cream with chili flakes!

Eddie said he needs to make more edits to the menu to make it clearer that items are celiac safe, and differentiate which sauces are and are not GF. But seriously it meant so much that he understood the emotional toll of eating gf, I almost cried!

He said that the transition from the old restaurant to Juche including a deep cleaning of all their equipment to ensure no gluten remained
