Fantastic experience! They know allergies really well and are able to make a celiac safe meal. The staff told me I could have almost everything on the menu except anything with masago (which is marinated in soy), and circled the rolls on the menu that contained gluten. They let me substitute the scallop for a safe roll on the list. Since you can see all rolls being made, I watched the chef change his gloves before making each of my five rolls. Rolls also are not pre sauced, but soy sauce on the table contains gluten, so bring your own soy sauce. Fun experience, really delicious food, and felt very safe!
