I am pretty sensitive and I have never had a problem here. I have gotten the paleo plate (with veggies instead of meat) and I've had their gf muffins. I love the space and the coffee. If you're looking for a place to work, it has Internet and electrical outlets :)
This place is expensive and doesn't get orders right. Hubby ordered me a gf sandwhich on white bread, and I got multigrain. I also have Sjögrens, which has given me mouth problems and eating certain textures. Needless to say, I could not eat the bread and only had the turkey. We were going to go back, but we were trying to beat a snow storm over the Atlantic City pass. We ended up driving through 4 inches of snow. I won't be going back to this place and I also am worried about cross contamination.

Gluten Free Rating: 3. Quality Rating: 4-5. This is a coffee shop that has baked goods and serves breakfast options and lunch sandwiches. There are always numerous GF baked goods (muffins, scones, cookies, cakes). BUT, celiacs beware, because the options are made using the same kitchen gear as the normal baked goods, so three is substantial cross contamination. I confirmed this by talking with the owner. Any sandwich on the menu can be made on a GF wrap, and the owners will take extra care to reduce cross contamination during prep (although there is NOT a separate line). I am Celiac and was fine after eating a tomato-pesto wrap, which was delicious. The coffee is excellent. GF folks: let them know that you'd like separate baking pans and utensils for the baked goods... with some improvements this could be a great GF option for central Wyoming.
