This is a new wood oven pizza place in Downers Grove. I wrote to them to ask them about their gluten free process before going and here's what they said : "Gluten Free dough is made in house at a separate station from our other dough making station, in a different mixer that has been designated ‘gluten free only’. When a gluten free pizza is ordered it is prepared and baked in our back kitchen separately from our pizza making station and in a different oven – the gluten free pizza is also baked in an individual pan so that it does not touch the stone surface directly. We strive to be as cautious as possible to isolate the gluten free dough and the orders as they are prepared."
When I went in to dine the staff alerted that they had a gluten-free pizza order. And then they told me their process and they would take a little bit longer because they had to use a different oven. I felt very safe eating there and the pizza was the best gluten free pizza I have ever had.
