They make a Bolivian bread called cuñapé with yuca flower which is gluten free. It is similar to Brazilian cheese bread if you are familiar, but much better and bigger. I cannot guarantee how gluten free it is for extra gluten sensitive people, but I have never had a problem. I highly recommend you try it.
