It was great! We stopped after a hike on our way back to Olympia. The entire menu is GF. I would recommend stopping to anyone passing through, GF or otherwise

Delicious food after a hike in Olympic National Park. (And the restaurant is, indeed, 100% gluten-free.) We ordered carnitas nachos (not soggy! very fresh!), mac ‘n’ cheese (made with corn and rice pasta, super creamy and decadent) and the Lomo Saltado (highly recommend). It was all incredible. The vibes were weird politically, but we didn’t catch that until we sat down. The staff was super friendly and attentive.

Found this place through the app and was pleased to discover everything on the menu is gluten free (except the beer). The place is small but cute just a few minutes off the main road. The menu is small, featuring their core offerings, and more Latin than Mexican (or Tex-mex)

Food service was FAST and very fresh. Tacos were excellent and the street corn side dish was fantastic. I highly recommend.

Thistle is a DEDICATED GF (with exception of a couple different beers) Latin Restaurant. We tried several items on the menu...my son's favorites were the Pupusa's, the Hubby loved the Nachos and my (I'm Celiac) favorite was the Asada Tacos with the sweet Habana sauce...it was delicious 😋 The owner (I read somewhere that he was is Vet) was so kind and very efficient! Great first impression and experience!

The entire restaurant is 100% gluten free. I met the owner, his wife cannot eat gluten and she is the cook. There is zero chance of cross contamination because there are no gluten ingredients in the building. I was able to eat anything on the menu. The food was fantastic. The owners are very nice and very open about what they use and do there. It was such a fantastic feeling to be able to pick anything on the menu.
