I don't eat sushi, but I really love their teriyaki chicken and rice bento! I'm pretty picky about teriyaki taste, but they nailed it! Great staff as well.
Yes
They can make almost their whole menu gluten free. They reminded me what I have been missing and then some. I ordered a roll and I wasn't happy with it. They traded it out, no questions. The tempura is wonderful. Polite, attentive, and customer oriented staff. Portions, flavor, quality are all wonderful.
Dedicated GF sushi menu, and most hot kitchen items are already GF. We eat here 1 or 2 times a month and have never been sick.

Update: sadly I’ve had to revise. In the past 6 months we’ve continued to eat many times at Mio but have had safety and quality go down. Despite always stating up front we need GF/celiac safety (and real crab) we’ve had fake krab in sushi, and there is definite confusion on whether their eel is safe - so ate it twice before someone told us it wasn’t safe.
Unfortunately, we can’t risk it anymore.

I have had sushi here many times and have always loved my food. They do have a GF menu and understand which items are safe. They do have Tamari. My favorite sushi place in Bend.
