First thing the wait staff asks at the table is if anyone has allergies. When I said celiac they explicitly wrote down that cross contamination was a concern, and while this didn’t happen to me I saw multiple tables have the chef out to discuss allergy issues and to check on ingredients. The gluten free menu is a little limited, but the pancakes were good enough for me to not care. Also, there are definitely things on the menu not explicitly marked as gluten free but that can be done safely (sides of both eggs and turkey sausage). Both times the waitresses confirmed with the chef to make sure as well.
