I talked to one of the employees who did point me in the right direction. They said almost anything can be made gluten free by using their white sauce. I got my food home only to open it up and see they stuffed the unpackaged crab cheese (as part of the meal which I told them I couldn't have) into the same container as the chicken and broccoli/white rice. I took a chance and ate from the opposite side of the container and I still got sick.

I have celiac and have not gotten sick there but I do not eat from the buffet. For lunch, I get the Snow White chicken. They steam all the veggies and they use a white sauce which you can get on the side. I get the steamed white rice. I get the egg drop soup. They use corn starch. I haven’t had many menu items but that is a safe option.
General tip for Chinese restaurants: I was told at a Chinese restaurant that most add soy sauce to the egg drop soup. Might want to ask before ordering it.
