I ordered take out online and was reassured that when I selected the gf pizza, the site specifically asked if this was for celiac. When I picked up the pizza, I asked how they make the gf pizza. He explained that they parbake it separately on sheet trays. When it’s time to top the pizzas, they do that in the walk-I’m fridge where the dough is kept, to avoid all the flour floating around the kitchen. It’s baked on trays so it doesn’t touch the oven surface. They keep a dedicated gf slicer and peel in a paper bag under the counter that I saw him pull out to cut my pizza. I felt very safe.
That said, I thought the pizza was just ok. Needed more seasoning. The dough is very soft and fluffy.
