The chef is Japanese, and the Japanese tend to be overly cautious with allergies. He originally said he did not feel comfortable serving me, but agreed to do so when I made it clear that I understand that he can’t guarantee it will be safe for me. He said that he cleans the surface and changes his gloves no matter what for all customers. And the sushi is AMAZING. I have eaten here twice and have not gotten sick. Best sushi I’ve had outside of Japan.
