We ate ourselves absolutely silly on a sushi boat which we asked the server to have the sushi chef adapt for us. All the staff seemed very knowledgeable about gluten free for celiac. Prepare yourself for no soup, no salad other than iceberg (and no dressing), no sauces, and no tempura or crunchy rolls. But I did not miss it at all- it was really good. FYI, they served me a California roll with crab stick (imitation crab) in it, which almost always has gluten in it in my experience. So I didn’t eat it for my own peace of mind. I had a gracious plenty of delicious pieces and rolls to eat without it!
