They were great. They offer lettuce wraps and the guy making my food changed his gloves immediately. The fries are safe too since they’re the only fried item and they are delicious!

Manager is a jerk. I wrote to corporate to let them know the manager of the Canton location is a jerk about gluten telling me there is a chance crumbs or even a whole burger bun could have contaminated the dryer so the fries were not safe. He also told me the hot dogs contain wheat starch which apparently means that either corporate is lying or this location doesn't buy approved suppliers.
Excellent food. Bun-less burgers and fries are safe (dedicated GF fryer). Reliable and delicious. Staff is careful to avoid cross-contamination.

I appreciate that they always ask if my lettuce wrapped order is an allergy. Fries are the only thing in the fryer, so no worries about cross contamination.

I’ve gone three times in two months and it’s been great every time. I tell them “allergy warning, I have celiac’s”. I order mine on lettuce (they do a really great job at wrapping the burger in lettuce), with everything on it.
I then inform them that my spouse would like a normal bacon burger on a bun. The staff has always reassured me and I hear them tell each other “allergy!” while cooking. They’ve always put my burger in a different bag marked “***ALLERGY***” and there was a red sticker on the tin foil of my burger.
If you’ve never been to a Five Guys, they have a very limited menu of just burgers (bacon, cheese, or plain) in three sizes, French fries (plain or Cajun), and milkshakes.
The only gluten items on the menu are the buns and malt. The chocolate shakes do not automatically come malted, so there’s never been a worry for me there.
